Eric Miller explained the science of matching the qualities of particular foods to wines that complement them.  He called it the “one plus one equals three” rule.  He explained that you take the first taste of the wine then taste the food.  The next taste of the wine will be different as a result of having tasted the food. 

Examples of good pairings are steak and Cabernet Sauvignon, salmon and Pinot Noir.  Another rule is that the dessert wine should be sweeter than the dessert.   Finally, decide what you like — that is most certainly the right wine for you.

 Guests sampled a variety of wines as they ate salmon, steak, lobster and crab cakes prepared by Mile High Steak and Seafood.  The evening was ended with the presentation of the Chadds Ford Live columnists Ellen Le, Kayta Gajdos, Sally Denk, Eric Miller, Nancy Sakaduski and managing editor Richard Schwartzman.  The anniversary cake was cut and passed around.  Cake slices were served with, of course, Chaddsford Riesling.
