1st Course
Grilled House-made Pretzel Baguette
House-made Ricotta, Shaved Peaches, Shishito Peppers, Mostardo
Paired with Stags’ Leap Chardonnay

2012 Stags' Leap Chardonnay Napa Valley
Distinct aromas of lemon zest, tart white peach and crisp pear show generously in this refreshing and focused cool-climate Chardonnay. On the palate, vibrant citrus fruit flavors are balanced by a wet stone core and pleasant undertones of light smoke. Driven by wonderful fruit intensity, lasting lemon minerality and bright acidity, the 2012 vintage walks the ideal line between delicacy and weight.

2nd Course
Modern Niçoise Salad
Herb Encrusted Tuna, Smoked Potatoes, Cured Egg Yolk, Niçoise Olives, Pomegranate Spiced Yogurt
Paired with 2012 Etude Pinot Noir Carneros

Etude Pinot Noir Carneros
The 2012 Carneros Estate Pinot Noir defines the classic Grace Benoist Ranch style with lifted red fruit aromas, ranging from pomegranate and red cherry to wild strawberry and raspberry, and a spicy entry of baking spice, forest floor and sandalwood. Refined tannins and ideal natural acidity frame the lush, intricate flavors. Despite the wine’s strength, it possesses a persistent fruit finish and elegance that make it uplifting and polished.

3rd Course
Roasted Venison Rack
Castle Valley Stone Ground Cheddar Grits, Mushroom Conserva, Stone Fruit Chimichurri
Paired with Beringer “Knights Valley” Cabernet

Beringer “Knights Valley” Cabernet
The 2011 Knights Valley Cabernet Sauvignon has aromas of ripe blueberry, blackberry, maple and nutmeg. Notes of currants, sassafras, and bright red fruits emerge from a dense core of fruit, accented by juicy acidity and a pretty finish. Beringer Vineyards has owned and farmed its Knights Valley vineyards since the mid-1960’s, when the Beringer family recognized that the cobbled alluvial soils were a great place to grow high quality wine grapes. The Knights Valley designation was first used on a Beringer label in 1974.

4th Course
Dark Chocolate Blackberry Caramel Tart
Cocoa Nib Shortbread Crust, Layer of Blackberry Caramel Sauce, Layer of Dark Chocolate Ganache, Topped with Brûléed Plums

Paired with Stag's Leap Merlot

2011 Stags' Leap Merlot Napa Valley
The 2011 Napa Valley Merlot is at once complex and approachable, opening with generous aromas of dark plum and bright red fruit, with enticing hints of clove and cinnamon throughout. Juicy red fruit flavors are effortlessly integrated with notes of caramel and savory spice that contribute depth to the polished palate. Smooth, velvety tannins and a refined texture give this Merlot a distinct level of sophistication while still being very approachable in its early years.
